Herby Tomato Bruschetta



Ingredients:
- 450g/1lb Ripe Tomatoes, chopped
- 1 tbsp freshly chopped Basil Leaves
- 1 tbsp freshly chopped Marjoram
- 1 tbsp freshly chopped Parsley
- 2 Garlic Cloves, finely chopped
- 1 tbsp Balsamic Vinegar
- 1 tbsp Olive Oil
- 1 teasp Lime or Lemon Juice
- Salt and Black Pepper
- 8 x 2.5cm/1-inch thick slices of Baguette, toasted
Preparation:
1. Place the tomatoes, herbs and vinegar, oil and lime juice in a large mixing bowl, season with salt and pepper and mix well.
2. To serve – Place the toasted bread on a serving platter and spoon the tomato mixture over the top. Serve at room temperature.
